I recently had a craving for a very fresh and green sauce, so i instantly thought about mint. I also wanted it to be creamy, so i decided to make it a yogurt base sauce. To add to the freshness and green, i also thought: cucumbers are very fresh and can add a great taste to the composition, and spinach is both healthy and good looking.
So these are the main ingredients i used for my sauce. It is very easy to prepare, and you can eat it with almost anything. Even by itself! It’s so delicious.
15 grams of fresh mint 10 cucumber slices of various sizes 10 fresh spinach leaves 200 grams non-fat yogurt
Preparation of this sauce is very simple. In a chopper, i just put all the greens (the mint from which i removed the longer stems, the cucumber slices with their peels still on and the spinach leaves). I chopped them until they became pretty fine.
Then i just removed the greens from the chopper, and gradually added them into a bowl into which i first poured all the yogurt. I used non fat yogurt simply to lower the amount of calories the final composition would give, but a fatter yogurt, especially a Greek style one, would give a much creamier and smoother result. The non fat yogurt i used gave about 30 calories per 100 grams.
The greens were added gradually into the yogurt, stirring gently and thoroughly to mix them well. After all the greens were added, i put the resulting sauce to the fridge for about 30 minutes, to cool and combine the flavors.
The beauty of this sauce also lies in the fact that i did not need to add any additional salt or spices to give it taste. And it went really well with a mix of grill style vegetables, consisting of zucchini, eggplants, carrots and mushrooms.
